Quick answer
Plan each task separately. An internet connection, a number that receives SMS and a local number that staff can call solve different problems. Keeping an overseas number does not guarantee that every Chinese app will accept it. A data-only eSIM does not, by itself, give you a mainland number for calls or SMS.

Before departure
- Ask your home carrier whether the number can receive texts in mainland China and what charges apply. Data roaming and SMS settings are different.
- Keep that SIM available if it is used for bank or wallet verification. Check your phone's dual-SIM and carrier-lock situation.
- Try the essential account setup before travelling. A successful sign-in still does not prove that a later payment will pass.
- Download the hotel address and keep one payment alternative separate from your phone.
When a local SIM becomes useful
Consider one if your repeated tasks require local calls or a mainland number. Beijing's official guide describes passport-based applications at participating operator service halls and airport counters. Check the specific branch, opening hours, plan and device compatibility; do not assume every shop can process your passport.
